January 3, 2013 Easy 1-2-3 Peanut Butter Cookies (cooks.com)

If you're anything like me, you need some quick, on-the-go recipes that require few ingredients and little time.  This one is worth sharing!
1 C. sugar
1 C. peanut butter (any kind will do)
1 egg

Mix ingredients well.  Roll into balls and bake at 350 for 6-11 minutes (depending on type of cookie sheet...my stone takes 11 minutes).  Immediately place a Hershey kiss in the middle of each cookie and let sit for 2 minutes.  Makes approx. 2 dozen.  These are a hit.  The tray is always empty!


May 2, 2012  Marinated Grilled Chicken


-boneless, skinless chicken breasts (might want to do a few extras...amazing left over!)
-favorite marinade
-provolone cheese (or mozzarella) thinly sliced
-partially cooked bacon strips
-large, round tomatoes, thinly sliced

Marinade the chicken as long as you wish.  If no time to marinade, flavor will still develop well with liberal brushing. 
Wrap chicken with a bacon strip or two.
Grill chicken as usual (I don't grill it, so if you need instructions, talk to someone else!  :-) )
Brush chicken often with marinade during grilling.
Just a few minutes chicken is cooked through put a tomato slice on top, and cover with a cheese slice. 
Throw some fresh veggies in beside the meat on the grill for extra goodness.
***We really haven't ever gotten into injecting our meats. Brushing works great if you are consistent.
April 27, 2012 VEGETABLE PIZZA

2 pkgs. Crescent Rolls

1 cup Mayo

2 - 8 oz. pkgs cream cheese

1 pkg. ranch dressing mix

1 cup monterey jack or cheddar cheese (shredded)

Veggies : tomatoes, carrots, broccoli, cauliflower (or your choice)

Cream together the mayo, cream cheese, and dressing mix.

Separate and roll out dough on greased and floured pizza pan. Bake according to pkg. Cool. Spread creamed mixture onto crust. Add vegetables. Sprinkle cheese on top.


April 25, 2012   FRUIT PIZZA

1 pkg. Pillsbury Sugar Cookie

Grease and flour pizza pan. Spread cookie mixture to cover pan. Then bake according to directions. Cool, then cut.

Mix together:
1 - 8 oz. pkg Philadelphia Cream Cheese, softened
1/3 cup sugar
1tsp. vanilla

Spread over baked and cooled crust. Top with:

1-16 oz. can crushed pineapple, drained
diced strawberries
1 can mandarin oranges
diced red and green grapes
sliced kiwi

Optional: Baste with 1 Tbsp. orange marmalade and 2 Tbsp. water

Enjoy!

***You will want to make this dessert at a time when most of it will be eaten within 2 days, as the cookie becomes soggy and the fruit may discolor.


9/30/2011 ZESTY MEATLOAF


Ingredients:
Hamburger
salsa
Stove Top Stuffing
eggs
salt and pepper, to taste
Preheat oven to 400°F.


Combine 1-3 lbs of hamburger meat, 1 jar of salsa (I use medium, but picante may be used instead), 1 egg, 1 box of Stove Top Stuffing and mix until well blended. Add salt and pepper to taste.
Place in a slightly greased loaf pan or nonstick pan and bake for 30-60 minutes.
Meatloaf is done when knife inserted comes out clean.

Hobos -
On a large piece of foil, place a seasoned hamburger patty.  On top of and around the burger, place as many veggies as one person will eat.  We like to use cauliflower, broccoli, carrots, onion, and potatoes.  Peppers, mushrooms, and squash would be great, as well.  Typically the carrots take the longest to grill, so tenderizing them first might be a good idea.  Wrap the foil around the meat/veggies, leaving a seam that can easily be opened to check for tenderness.    Place each individual's initial on the outside of their foil packet, grill, and enjoy!
***Kids love to create their own hobos, filling them with their favorite veggies.

Many of you have asked me for this recipe, and I thought I had posted it earlier, so I apologize! Greg suggested that I make business cards with this recipe and put them next to the dish when I bring it to potluck dinners, etc., and that may be an idea! :) Anyway, here it is:

Vegetable Bake (Pampered Chef)
3-16 oz. bags California Blend (I prefer Aldi because the broccoli is all florets, no stems)
1 cup mayonaise
1 tsp. pepper (use more to taste)
8 oz. shredded cheddar cheese
1-14.5 oz. can cream of mushroom soup
1 clove garlic (more or less to taste)

Spread California Blend into a 9x13 inch baking dish. Combine all other ingredients in a bowl, then spread evenly over veggies. Bake @ 350 for 45 minutes, or until the veggies are like you like them (more tender or more firm). Add French's Fried Onions (Cheddar Onions are great, too!), and bake another 5 minutes or until golden. Let set for 5 minutes or so before serving.

**I make this alot because it is basically foolproof. Baking time can be adjusted by letting the veggies thaw before baking. If they are frozen solid, it may take more than an hour to reach desired tenderness.

4/4/11  Oreo Delight Recipe
With spring weather (hopefully) soon approaching, I thought I would share a simple recipe that our family has come to L.O.V.E.!  For years my mom has made variations of Oreo Delight, and now that I've finally made it in my own kitchen, I'm thinking up some really dreamy combinations (yes, they include lots of chocolate).
1 - whipped topping              1/2 gallon vanilla ice cream                               
1/2 - 1 stick butter                1-package Oreo cookies
Saving out 10 cookies, crush the rest and mix with melted butter in bottom of 9x13.  Mix softened ice cream with whipped topping until smooth.  Layer over crust.  Pull apart at least 6 of the remaining cookies (careful not to break), and space them evenly on top of the dessert.  A 9x13 typically makes 12 good sized servings, so 12 cookie halves, evenly spaced, make a nice topper.  Re-freeze, and serve when you can no longer resist the temptation!

Mint Delight (substitute mint Oreos and mint choc. chip ice cream)
